Good for your wallet and waist..ROOT chips! : )

It's the end of August, the time of year all of us food lovers get very excited over the littlest things. Farmers markets and local corn stands. Squash and ripe tomatoes. Delicious local purple grapes. Yum! The abundance of produce gives all our little food loving hearts, major cooking inspiration.
This past weekend we were out and about and had these delicious Terra Root Chips.. In the midst of all the gathering of farm goodies, we thought of these chips as a perfect way to incorporate those 'kind of not popular' root veggies into our diets.
The Terra Root chips that we bought were tasty, but slightly expensive!
There had to be a way to make them...
so what do the lovely single girls do on a Sunday afternoon?
We slice and dice!



























Root Veggie Chips
Makes 3-4 servings.

Ingredients

2 sweet potatoes
2 beets
1 rutabaga
2 carrots
1 parsnip
2-3 potatoes
olive oil and sea salt

Preheat your oven to 350'F

Step 1: Peel and slice all your veggies. We used a mandolin, but you could use a sharp knife and cut thin slices of all your veggies.
Step 2: Toss them in a couple of tablespoons of olive oil and generous sprinkling of sea salt. Arrange them in a single layer on a baking sheet
Step 3: Bake for 15 min or so, or until the edges are dried out. Take them out and flip those chips over! Pop them back in for another 10 min or until they smell ready to you :) Season with more salt if desired.
