Happy Shrove Tuesday! Pancake Tuesday! Fat Tuesday!
It's the last day before Lent starts for us and that means one very important thing: we get to have breakfast for dinner! Yes we know we are all adults, but we still all get excited about switching up the routine and eating a delicious breakfast for supper. It's been a long standing tradition in our family to have pancakes and waffles for Shrove Tuesday. Now with all the diet changes and sensitive tummies, we have had to change our pancake- eating- celebration.
Food for your bellies
Where did all this pancake eating come from? Traditionally it was meant to be a night of cleaning out all the rich foods from your kitchen, hence the pancakes as they have milk, eggs and butter and for us jugs of maple syrup. Charlotte's Golden Pancakes
You will need:
2 large eggs
1/2 of a mashed banana
1/2 tsp of apple cider vinegar
1/2 tsp of vanilla
2 1/2 tbsp. of coconut flour
1/2 tsp of cinnamon
1/4 tsp of baking soda
1 pinch of salt.
Mix together eggs, mashed banana, apple cider vinegar and vanilla.
In a small bowl mix together coconut flour, cinnamon, baking soda and salt. Add to the wet ingredients and stir until well combined.
Use spray oil or olive oil and grease your pan, heat over medium heat. When the pan is hot, scoop a spoonful of batter in the pan. Wait until the pancake is no longer runny and the sides are golden before flipping. Repeat on the other side.
Serve with your favourite berries and maple syrup. Enjoy!
Yields 8 pancakes approx. 4 inches

Why is it called Shrove Tuesday? It comes from the past tense of the word shrive/shriven/shrove and it means to cleanse, to be purified, specifically to go to confession. I didn't know this and thankfully was educated of this fact by the wise Fr Denis on his blog here. Take a few minutes of the day and read his wise words.
