In our home these days we know that when our Mom is off from work, she makes muffins. Every Wednesday we can count on homemade muffins made with love by our Mom. Sometimes she even brings little love gifts to us at work: delicious, home made, chocolate chip muffins. Our taste buds and bellies sing her praises : )
Here is our Mom's second favourite muffin recipe:
Chocolate Chip Muffins
Ingredients
2 cups of spelt flour-or gluten free flour of your choice.
1/2 cup of white sugar
3 tsp baking powder
1/4 tsp salt
1 cup of dark chocolate chips (we get ours from our favourite health food store:
1 egg
1 cup of soya milk
1/3 cup of coconut oil.
Step 1: Preheat oven to 375'F. Line a muffin tin.
Step 2: Combine all dry ingredients together with a whisk, including chocolate chips.
Step 3: In a mixing bowl, stir together wet ingredients.
