Can't believe it's Kale Stir Fry


Lately in our home we run out of time for dinner planning. Even with the best intentions, five minutes to five we scramble and rely on this hearty, quick one pan stir fry. It is delicious and gets even the most resistant kale eaters ( even our puppy Clarence!)  to lick their forks and ask for more. Kale often gets a bad rap as it can be hard to eat and hard to cook, but is so yummy in soups, stirfry, salads, and if you are daring a green drink.





























If you are new to Kale, it is a form of cabbage and is high in vitamin K, beta carotene, vitamin C, and lots of calcium. It is also a source of indole-3-carbinol, a chemical which boosts DNA repair in cells and prevents the growth of cancer cells.




























 Don't be fooled by the non organic stuff, organic kale is the absolute best and only way to eat it. The non organic kale is filled with pesticides, and other nasty stuff. The organic kale is only a few cents more, you can buy a large head of kale for $3.00, and better yet you can grow your own for a few pennies.



























Can't Believe it's Kale Stir Fry

Ingredients:
1 tbsp of grapeseed oil
1 pound of mushrooms
1 large onion -sliced
1 bell pepper, red or orange- sliced 
1 large head of Kale- cut up into bite sized pieces
2 tbsp of water
A package of rice noodles, or rice of your choice

Your favourite Peanut Sauce! We love this one: Eating Well Peanut Sauce

Directions
1.In a large frying pan, heat the grapeseed oil over medium-high heat.
2.Saute onions for a few minutes. Add mushrooms, saute until golden.
3.Add pepper and saute together for 5 minutes, or until pepper is tender.
4. In the meantime, boil water and cook rice noodles according to package directions
5.Add all the kale, 2 tbsp of water and cover with a lid. Steam for 3-4 minutes.

Layer rice noodles, sauted kale mixture and peanut sauce in a clear dish.
