Muffin Love

You should know one thing about us Crazy Daisies: we are carb lovers : ) We grew up on comfort food and absolutely love love love our Mama's baking. If you are curious about other muffin recipes, check out our recipe page : )
Last week we were at the Superstore and our younger brother wanted to buy the relatively new PC Gluten Free Double Chocolate Chip Muffins .Well those muffin babies do look very tasty, they are also super expensive and a little bit high on the fat scale. For a 'healthy' product they are more a dessert and not a good choice snack. Our talented Mama managed to convince our bro that she could whip up even better muffins for him that very evening. And of course, she did. 

Save yourself some bucks and make these delicious muffins!



























Carole's Even Better Double Chocolatey Muffins 

You will need:

1 and 1/2 cup of spelt flour or Gluten Free mix of your choice. We like Bob Mills 
1/2 cup of white sugar
1/2 cup of sifted good quality dark cocoa-it makes a HUGE difference, ie not Old Dutch
1/4 tsp of salt 
1 cup of mini dark chocolate chips 
1 egg
1 cup of organic soya milk
1/3 cup of melted organic coconut oil 

Preheat oven to 375'. Line or grease a muffin pan. 

Step 1: Mix dry ingredients and add chocolate chips 
Step 2: Combine egg, milk and butter and stir into flour mixture. Do not beat. 
Step 3: Bake for 20 min. 






























Yields 1 dozen
